Ingredients
  

  • 1 cup unsalted butter softened
  • 2/3 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 whole lemon zest of one
  • 1 large egg
  • 1 teaspoon lemon extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar for rolling
  • 1/2 cup powdered sugar
  • 1 tablespoon lemon juice
  • 2-3 teaspoons milk or heavy cream

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Step 2: In a large mixing bowl, combine the softened unsalted butter, granulated sugar, and brown sugar. Beat on medium speed until light and fluffy, about 2-3 minutes.
  3. Step 3: Add the lemon zest, egg, and lemon extract. Beat until well combined.
  4. Step 4: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add to the wet mixture, mixing on low speed until just combined.
  5. Step 5: Portion out the dough onto the prepared baking sheet, leaving space between cookies. Roll each portion in extra granulated sugar to coat.
  6. Step 6: Bake for 10-12 minutes, or until the edges are lightly golden.
  7. Step 7: While baking, prepare the glaze by whisking powdered sugar, lemon juice, and milk until drizzle-able.
  8. Step 8: Allow cookies to cool for 5 minutes before transferring to a cooling rack. Drizzle the glaze over cooled cookies.
