- Begin by removing the stems from the kale and finely chopping the leaves. Place the chopped kale in a large mixing bowl.
- Add the lime juice, olive oil, salt, and pepper to the kale. Gently massage the kale with your hands for about 2-3 minutes until it starts to soften.
- To the bowl of dressed kale, add the sliced apple, fresh blueberries, sliced avocado, and sunflower seeds. If you’re using feta cheese, sprinkle it over the top.
- In a separate bowl, combine the blueberries, olive oil, lemon juice, honey, balsamic vinegar, water, salt, and pepper. Use a whisk to blend all the ingredients until smooth.
- Drizzle the blueberry vinaigrette over the salad and toss gently to combine.
- Serve the salad immediately for the best texture and flavor.
