Ingredients
  

For the Salad:
  • 8 cups kale (stems removed and finely chopped)
  • 1 tablespoon lime juice (fresh)
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper
  • 1 apple (cored and sliced)
  • 1 cup blueberries (fresh)
  • 1 avocado (peeled, pitted, and sliced)
  • ½ cup feta cheese (crumbled, optional)
  • 2 tablespoons sunflower seeds
For the Blueberry Vinaigrette:
  • 1 cup blueberries (for vinaigrette)
  • 3 tablespoons olive oil (for vinaigrette)
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon balsamic vinegar
  • 2 tablespoons water
  • to taste salt (for vinaigrette)
  • to taste pepper (for vinaigrette)

Method
 

Directions:
  1. Begin by removing the stems from the kale and finely chopping the leaves. Place the chopped kale in a large mixing bowl.
  2. Add the lime juice, olive oil, salt, and pepper to the kale. Gently massage the kale with your hands for about 2-3 minutes until it starts to soften.
  3. To the bowl of dressed kale, add the sliced apple, fresh blueberries, sliced avocado, and sunflower seeds. If you’re using feta cheese, sprinkle it over the top.
  4. In a separate bowl, combine the blueberries, olive oil, lemon juice, honey, balsamic vinegar, water, salt, and pepper. Use a whisk to blend all the ingredients until smooth.
  5. Drizzle the blueberry vinaigrette over the salad and toss gently to combine.
  6. Serve the salad immediately for the best texture and flavor.
