Ingredients
  

For the Salad:
  • 2 bunches kale (small, stems and center ribs removed)
  • 1/4 cup goji berries (dried cranberries can be used for a sweeter touch)
  • 1/4 cup pumpkin seeds (or sunflower seeds or pine nuts)
  • 1 cup blueberries (fresh, stems removed and rinsed)
  • 1 tablespoon extra virgin olive oil
  • 1 ripe avocado (peeled, pitted, and diced)
  • Salt and pepper to taste

Method
 

Instructions:
  1. Start by washing your kale thoroughly to remove any dirt or debris. If you’re using whole bunches, remove the tough stems and center ribs. Tear the kale leaves into bite-sized pieces and place them in your large salad bowl.
  2. Next, add the goji berries and fresh blueberries to the bowl with the kale. If you prefer, you can substitute the goji berries with dried cranberries for an extra hint of sweetness.
  3. Now it’s time to add the pumpkin seeds (or sunflower seeds or pine nuts) to the mix. These will provide a delightful crunch and a boost of healthy fats and protein.
  4. Gently fold in the diced avocado, being careful not to mash it. The avocado will add creaminess and richness to the salad.
  5. Before serving, drizzle the extra virgin olive oil over your salad. Season with salt and pepper to taste, and toss everything together gently to combine.
  6. Your Kale Berry Salad is now ready to be served! Enjoy it immediately, or let it sit for a few minutes to allow the flavors to meld together.
