Ingredients
  

For the Pasta:
  • 1 lb lean ground beef
  • 1 oz taco seasoning 1 package
  • 1 10-oz can Rotel diced tomatoes and green chilies
  • 2 Tbsp all-purpose flour
  • 4 cups beef broth
  • 1 16-oz box penne pasta
  • Salt and pepper to taste
  • 1 15-oz jar salsa con queso
  • 1 cup shredded Mexican cheese blend

Method
 

Instructions
  1. Set your Instant Pot to the sauté function. Add the lean ground beef and cook until browned, breaking it apart with a wooden spoon. This should take about 5-7 minutes. Drain any excess fat if needed.
  2. Sprinkle the taco seasoning over the browned beef, followed by the flour. Stir well to coat the beef and create a flavorful base.
  3. Pour in the can of Rotel diced tomatoes and green chilies, followed by the beef broth. Stir to combine everything, ensuring the beef and seasoning are evenly distributed.
  4. Add the penne pasta to the pot, making sure it's submerged in the liquid but not stirring it in.
  5. Close the lid of the Instant Pot and set the valve to sealing. Cook on high pressure for 4 minutes.
  6. Once the cooking time is up, perform a quick release by carefully turning the valve to venting. Let the steam escape before opening the lid.
  7. Stir in the jar of salsa con queso until fully melted and incorporated. Season with salt and pepper to taste.
  8. Finally, sprinkle the shredded Mexican cheese blend on top, allowing it to melt into the delicious pasta.

  • For a lighter option, swap the beef for ground turkey or chicken.
  • Add black beans or corn for extra texture and flavor.
  • Top with fresh cilantro or avocado for a refreshing finish.
