Ingredients

  • 1 cup steel cut oats
  • 2 cups water
  • 1 cup unsweetened almond milk
  • 1/4 cup walnuts (chopped fine)
  • 2 tablespoons ground flaxseeds (flaxseed meal)
  • 2 tablespoons chia seeds
  • 1 large ripe banana (mashed)
  • 2 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1 pinch salt
  • Chopped toasted walnuts (for topping)
  • Banana slices (for topping)
  • A sprinkle of ground cinnamon (for topping)
  • Your favorite nut milk (for serving)

Equipment

  • 6-Quart Instant Pot
  • Measuring cups and spoons
  • Mixing bowl
  • Spoon or spatula
  • Serving bowls

Method

  1. Step 1: Gather Ingredients - Ensure all your ingredients are measured and ready to go. This will streamline the cooking process.
  2. Step 2: Combine Ingredients in the Instant Pot - In the Instant Pot, add 1 cup of steel cut oats, 2 cups of water, and 1 cup of unsweetened almond milk. Stir well to combine.
  3. Step 3: Add Nutrient Boosters - Next, add 1/4 cup of chopped walnuts, 2 tablespoons of ground flaxseeds, and 2 tablespoons of chia seeds. Mix these into the oat mixture for added texture and nutrition.
  4. Step 4: Sweeten and Spice It Up - Add 1 large mashed banana, 2 tablespoons of pure maple syrup, 1 teaspoon of ground cinnamon, 1 teaspoon of pure vanilla extract, and a pinch of salt. Stir everything together until well combined.
  5. Step 5: Cook in the Instant Pot - Secure the lid on the Instant Pot, making sure the valve is set to sealing. Select the manual high-pressure setting and set the timer for 10 minutes. Once the cooking cycle is complete, allow for a natural release for about 10 minutes before manually releasing any remaining pressure.
  6. Step 6: Fluff and Serve - Carefully remove the lid and give the oats a good stir. They should be creamy and perfectly cooked. Serve the oats in bowls topped with chopped toasted walnuts, banana slices, and a sprinkle of ground cinnamon. Drizzle with your favorite nut milk for an extra touch.
