  • 5 tablespoons unsalted butter divided
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon pepper to taste
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon oregano 1 teaspoon fresh or 1/4 teaspoon dried
  • 2 cloves garlic minced
  • 1/4 cup Panko breadcrumbs
  • 1 teaspoon lemon zest
  • 1 tablespoon parsley minced
  • 1/4 cup Parmesan cheese grated

Method
 

Instructions
  1. 1. Begin by rinsing your scallops under cold water and patting them dry with a paper towel.
  2. 2. In a small bowl, combine 1/4 teaspoon of salt, 1/4 teaspoon of pepper, and 1/8 teaspoon of garlic powder. Sprinkle this mixture evenly over the scallops.
  3. 3. In another bowl, mix the Panko breadcrumbs, lemon zest, parsley, oregano, and grated Parmesan cheese. Drizzle in 1 tablespoon of melted butter and stir until evenly coated.
  4. 4. In a large skillet, melt 2 tablespoons of butter over medium-high heat.
  5. 5. Carefully place the seasoned scallops in the skillet and sear for about 2-3 minutes on one side until a golden crust forms. Flip the scallops gently.
  6. 6. After flipping, sprinkle the breadcrumb mixture over each scallop and cook for an additional 2-3 minutes until opaque and golden brown.
  7. 7. In the last minute, add the minced garlic and remaining melted butter to the skillet.
  8. 8. Remove the scallops from the skillet, garnish with minced parsley, and serve warm.
