Ingredients
  

For the Chicken:
  • 1.5 lbs chicken drumsticks
  • 1 lemongrass top part trimmed off
  • 4 garlic cloves peeled and chopped
  • 1.5 tablespoons soy sauce
  • 0.5 tablespoons oyster sauce or fish sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 3 dashes white pepper
  • 1 pinch salt

Method
 

Cooking Instructions:
  1. Prepare the marinade by combining chopped garlic, soy sauce, oyster sauce (or fish sauce), honey, sesame oil, white pepper, and salt in a mixing bowl.
  2. Bruise the trimmed lemongrass lightly with a knife to release its oils, then chop it into small pieces.
  3. Marinate the chicken by tossing drumsticks in the marinade and adding the chopped lemongrass. Let it marinate for at least 30 minutes or overnight.
  4. Preheat the oven to 400°F (200°C) and place the marinated chicken in a baking dish. Bake for 35-40 minutes until fully cooked and crispy.
  5. Let the chicken rest for a few minutes before serving hot, optionally garnished with fresh herbs or lime wedges.

Notes

  • For a spicier version, add sliced chili peppers to the marinade.
  • Fresh ginger can enhance the flavor profile beautifully.
  • Consider roasting seasonal vegetables alongside the chicken for a complete meal.
