Rinse 1 cup of dry quinoa under cold water in a fine-mesh strainer. In a medium saucepan, combine the rinsed quinoa, 3 cups of water, and 1 teaspoon of kosher salt. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until all the water is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.
While the quinoa is cooking, grate the carrot and zucchini. Make sure to squeeze the grated zucchini in a clean kitchen towel to remove excess moisture.
In a large mixing bowl, combine the cooked quinoa, cottage cheese, chopped parsley, grated carrot, squeezed zucchini, eggs, onion powder, pepper, and minced garlic. Add 1 teaspoon of kosher salt. Stir everything together until well mixed.
Using your hands, form the mixture into burger patties, about ½ inch thick. You should be able to make approximately 8 patties.
Spray a skillet or grill with cooking spray and place it over medium heat. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and crispy. Alternatively, preheat your oven to 375°F (190°C) and bake for 20-25 minutes, flipping halfway through.
Once cooked, serve your homemade quinoa burgers on a bun or over a salad with your favorite toppings.
