Homemade Quinoa Burgers

Ingredients
  

  • 1 cup dry quinoa rinsed
  • 3 cups water
  • 1 teaspoon kosher salt for cooking quinoa
  • ½ cup cottage cheese
  • ¼ cup fresh parsley chopped
  • 1 large carrot grated
  • 1 ½ cups grated zucchini squeezed dry
  • 2 large eggs
  • 1 teaspoon onion powder
  • 1 teaspoon pepper
  • 1 teaspoon kosher salt to season mixture
  • 1 tablespoon minced garlic
  • 2 cups cooked quinoa slightly cooled
  • 1 spray cooking spray

Method
 

  1. Rinse 1 cup of dry quinoa under cold water in a fine-mesh strainer. In a medium saucepan, combine the rinsed quinoa, 3 cups of water, and 1 teaspoon of kosher salt. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until all the water is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.
  2. While the quinoa is cooking, grate the carrot and zucchini. Make sure to squeeze the grated zucchini in a clean kitchen towel to remove excess moisture.
  3. In a large mixing bowl, combine the cooked quinoa, cottage cheese, chopped parsley, grated carrot, squeezed zucchini, eggs, onion powder, pepper, and minced garlic. Add 1 teaspoon of kosher salt. Stir everything together until well mixed.
  4. Using your hands, form the mixture into burger patties, about ½ inch thick. You should be able to make approximately 8 patties.
  5. Spray a skillet or grill with cooking spray and place it over medium heat. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and crispy. Alternatively, preheat your oven to 375°F (190°C) and bake for 20-25 minutes, flipping halfway through.
  6. Once cooked, serve your homemade quinoa burgers on a bun or over a salad with your favorite toppings.

Notes

  • Ensure to squeeze out excess moisture from the grated zucchini for better binding.
  • These burgers freeze well; place uncooked patties on a baking sheet and freeze until solid.
  • Experiment with different herbs and spices to customize the flavor!
