Ingredients
  

For the Crackers:
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • ½ cup rye flour
  • 6 tablespoons warm water (6 tablespoons plus 2 teaspoons)
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon honey (optional)
  • 1 teaspoon fine sea salt
  • 1 large egg white
  • 2 tablespoons white sesame seeds
  • 2 teaspoons black sesame seeds
  • 4 teaspoons dried onion flakes
  • 1 tablespoon dried minced garlic
  • 2 teaspoons flake sea salt
  • 1 teaspoon nigella seeds
  • 1 teaspoon poppy seeds
  • ½ teaspoon caraway seeds

Method
 

Instructions:
  1. In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, rye flour, fine sea salt, and all of the seeds (white sesame, black sesame, nigella, poppy, and caraway). Make sure they are evenly distributed.
  2. In a separate bowl, combine the warm water, extra virgin olive oil, and honey (if using). Stir until well mixed.
  3. Pour the wet mixture into the bowl with the dry ingredients. Stir with a spatula until a dough begins to form. It may seem a bit crumbly at first, but don’t worry! Use your hands to knead it gently until it comes together into a cohesive ball.
  4. Preheat your oven to 350°F (175°C). On a lightly floured surface, roll out the dough to your desired thickness—about 1/8 inch works well for crispy, thin crackers. If the dough is sticky, dust it lightly with flour as you roll.
  5. Using a pizza cutter or sharp knife, cut the rolled dough into squares or any shape you prefer. Transfer the cut crackers to the prepared baking sheet, leaving a little space between each piece.
  6. In a small bowl, whisk the egg white until frothy. Brush the top of each cracker with the egg white, then sprinkle with flake sea salt, dried onion flakes, and dried minced garlic for extra flavor.
  7. Bake the crackers in the preheated oven for about 15-20 minutes or until they are golden brown and crisp. Keep an eye on them, as baking times may vary based on your oven.
  8. Once baked, remove the crackers from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy your Homemade Everything Crackers plain or with your favorite dips and spreads!
