Ingredients
  

  • 8 oz. rice noodles
  • 2-3 green onions
  • 2 tsp. sesame seeds
  • 3 Tbsp. hoisin sauce choose gluten-free if needed
  • 1 Tbsp. peanut butter creamy and natural
  • 1 Tbsp. rice vinegar
  • 1 tsp. pure maple syrup
  • 1 clove garlic minced
  • 1/2 tsp. ginger freshly grated
  • 1-2 Tbsp. water or veggie broth optional, as needed
  • roasted peanuts or cashews for topping
  • red pepper flakes to taste
  • fresh cilantro

Method
 

  1. Start by boiling a pot of water. Once it’s at a rolling boil, add the rice noodles and cook according to package instructions, typically about 4-6 minutes. Stir occasionally to prevent sticking.
  2. While the noodles are cooking, grab a mixing bowl. Add the hoisin sauce, peanut butter, rice vinegar, maple syrup, minced garlic, and freshly grated ginger. Whisk everything together until smooth. If the sauce is too thick, gradually add water or veggie broth until you reach your desired consistency.
  3. Once the noodles are cooked, drain them and give them a quick rinse under cold water to stop the cooking process. This helps keep them from becoming mushy.
  4. In a large mixing bowl, combine the drained noodles with the sauce. Toss them together gently but thoroughly, ensuring each noodle is coated with that delicious hoisin-peanut mixture.
  5. Chop the green onions and sprinkle them over the noodles. Add sesame seeds, and any other toppings you’re using like roasted peanuts, red pepper flakes, or fresh cilantro. Toss gently to combine and serve immediately.

  • Store noodles and sauce separately for up to 3 days.
  • Reheat gently with a splash of water or broth.
  • Add fresh toppings just before serving for optimal crunch.
