Ingredients
  

  • 1 cup mashed bananas (about 2 large bananas)
  • 1/3 cup natural creamy peanut butter (or almond butter)
  • 1/4 cup pure maple syrup (or honey)
  • 1 large egg (or a flax egg)
  • 2 teaspoons vanilla extract
  • 3/4 cup oat flour
  • 1/4 cup chocolate protein powder (optional)
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon chia seeds (optional)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 cup old-fashioned oats , plus 3 tablespoons
  • 1/3 cup chocolate chips
  • Flaky sea salt for sprinkling on top

Method
 

  1. Preheat your oven to 350°F (175°C). This ensures that your cookies bake evenly and come out perfectly chewy.
  2. Line a baking sheet with parchment paper. This will prevent the cookies from sticking and make cleanup a breeze.
  3. In a large mixing bowl, combine the mashed bananas, peanut butter, maple syrup, egg, and vanilla extract. Use a whisk or spoon to mix until smooth and well combined.
  4. In a separate bowl, mix together the oat flour, chocolate protein powder, cocoa powder, chia seeds (if using), baking soda, and sea salt. Stir until evenly distributed.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix, as this can lead to denser cookies.
  6. Gently fold in the old-fashioned oats and chocolate chips, ensuring that they are evenly distributed throughout the dough.
  7. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Before baking, sprinkle a little flaky sea salt on top of each cookie for that perfect sweet and salty contrast.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are slightly golden. The centers may look a little underbaked, but they will set as they cool.
