Ingredients

For the Bread:
  • 1 cup Whole Wheat Flour
  • 2 tablespoons Whole Wheat Flour
  • 1/2 cup Unsweetened Cocoa Powder sifted
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 3/4 teaspoon Ground Cinnamon
  • 1/3 cup Coconut Sugar (use 1/2 cup for a sweeter loaf)
  • 1/3 cup Coconut Oil melted
  • 2 large Eggs lightly beaten, at room temperature
  • 3 teaspoons Milk (cow's milk, almond milk, or coconut milk are all fine!)
  • 2 teaspoons Vanilla Extract
  • 1 and 1/2 cups Very Ripe Bananas peeled and mashed (about 5 or 6 bananas)
  • 3/4 cup Chopped Walnuts optional
  • 1/2 cup Semi-Sweet or Dark Chocolate chopped into small chunks, optional

Equipment

  • Mixing bowls
  • Whisk
  • Loaf pan
  • Spatula
  • Measuring cups and spoons
  • Oven

Method

Stepwise Method:
  1. Step 1: Preheat the Oven
Begin by preheating your oven to 350°F (175°C). This ensures that your bread will bake evenly and rise beautifully.
  2. Step 2: Prepare the Pan
Grease your loaf pan with a thin layer of coconut oil or line it with parchment paper for easy removal.
  3. Step 3: Combine Dry Ingredients
In a large mixing bowl, whisk together the whole wheat flour, sifted cocoa powder, baking soda, baking powder, salt, and ground cinnamon until well combined.
  4. Step 4: Mix Wet Ingredients
In another bowl, combine the melted coconut oil and coconut sugar, stirring until well blended. Then add the lightly beaten eggs, milk, and vanilla extract. Mix until smooth.
  5. Step 5: Add Mashed Bananas
Fold the mashed bananas into the wet mixture until fully incorporated. This will add moisture and sweetness to your bread.
  6. Step 6: Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay!
  7. Step 7: Add Optional Ingredients
If you’re using walnuts or chocolate chunks, fold them into the batter now for added texture and flavor.
  8. Step 8: Pour and Bake
Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Step 9: Cool and Serve
Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy your Healthy Chocolate Banana Bread!

Notes

  • Store the bread in an airtight container at room temperature for up to 3 days.
  • For longer storage, wrap it tightly in plastic wrap and refrigerate for up to a week.
  • Slice and freeze the bread in a freezer-safe bag for about 2-3 months.
