Ingredients
  

  • 1.5 cups whole wheat flour packed with fiber
  • 1 teaspoon baking soda essential for leavening
  • 0.5 teaspoon baking powder for light texture
  • 0.5 teaspoon salt balances sweetness
  • 1 teaspoon ground cinnamon adds warmth
  • 0.5 cups coconut sugar natural sweetener
  • 0.25 cups coconut oil melted
  • 0.25 cups unsweetened applesauce substitute for fat
  • 2 large eggs lightly beaten, at room temperature
  • 2 teaspoons vanilla extract enhances flavor
  • 3 very ripe bananas peeled and mashed
  • 1.5 cups fresh blueberries bursts with flavor
  • 1 banana sliced in half optional topping

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease your loaf pan with coconut oil or line it with parchment paper.
  3. In a medium bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and ground cinnamon. Set aside.
  4. In a large bowl, mix the melted coconut oil, coconut sugar, and applesauce until well combined. Add the lightly beaten eggs and vanilla extract, mixing until smooth.
  5. Stir in the mashed bananas into the wet mixture until fully combined.
  6. Gently fold the dry ingredients into the wet ingredients using a spatula, being careful not to overmix.
  7. Gently fold in the fresh blueberries, reserving a few for the top if desired.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula. If using, place the halved banana on top.
  9. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

  • Store at room temperature in an airtight container for up to 3 days.
  • Refrigerate for up to a week or freeze for up to 3 months.
  • To reheat, slice and warm in the microwave for 15-20 seconds or in a toaster oven.
