- Bring a large pot of salted water to a boil. Add the spiral pasta and cook according to package instructions until al dente. Reserve 1¼ cups of chicken broth and drain the pasta.
- In a large skillet, heat olive oil over medium heat. Add chopped broccoli and diced red bell pepper. Sauté for about 5-7 minutes, until broccoli is tender but still vibrant.
- To the skillet, add reserved chicken broth and butter. Stir until butter is melted, then crumble in goat cheese and stir until melted and creamy.
- Add the drained pasta to the skillet and toss until well coated with the sauce. Season with salt and pepper to taste.
- In a small dry skillet, toast pine nuts over medium heat, stirring frequently until golden brown and fragrant, about 3-5 minutes.
- Top the pasta with toasted pine nuts and a sprinkle of fresh parsley if desired. Serve immediately and enjoy!

- Use vegetable broth for a vegetarian version.
- Feel free to add seasonal vegetables like asparagus or zucchini.
