  • 12 ounces Spiral pasta
  • cups Chicken broth reserve after cooking pasta
  • 2 tablespoons Olive oil
  • 3 cups Chopped broccoli
  • 1 Diced red bell pepper
  • 4 tablespoons Butter
  • 5 ounces Goat cheese
  • ¼ cup Pine nuts toasted
  • Salt to taste
  • Pepper to taste
  • Fresh parsley optional, for garnish

Method
 

Instructions
  1. Bring a large pot of salted water to a boil. Add the spiral pasta and cook according to package instructions until al dente. Reserve 1¼ cups of chicken broth and drain the pasta.
  2. In a large skillet, heat olive oil over medium heat. Add chopped broccoli and diced red bell pepper. Sauté for about 5-7 minutes, until broccoli is tender but still vibrant.
  3. To the skillet, add reserved chicken broth and butter. Stir until butter is melted, then crumble in goat cheese and stir until melted and creamy.
  4. Add the drained pasta to the skillet and toss until well coated with the sauce. Season with salt and pepper to taste.
  5. In a small dry skillet, toast pine nuts over medium heat, stirring frequently until golden brown and fragrant, about 3-5 minutes.
  6. Top the pasta with toasted pine nuts and a sprinkle of fresh parsley if desired. Serve immediately and enjoy!

Notes

  • Use vegetable broth for a vegetarian version.
  • Feel free to add seasonal vegetables like asparagus or zucchini.
  • For a different flavor, substitute goat cheese with cream cheese or parmesan.
