  • 8 oz udon noodles or your choice of noodles
For the Sauce:
  • 1 large bunch green onions/scallions chopped
  • 1 tablespoon ginger root finely minced
  • 1 teaspoon garlic finely minced
  • 2 tablespoons vegetable oil
  • 3 tablespoons soy sauce
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon brown sugar
  • 1/2 teaspoon black pepper freshly ground
  • 1/2 teaspoon red chile flakes optional
  • sesame seeds for garnish

Method
 

Instructions:
  1. Step 1: Cook the Noodles - Begin by bringing a large pot of water to a boil. Add the udon noodles and cook according to package instructions until al dente. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.
  2. Step 2: Sauté the Aromatics - In a skillet or wok, heat 2 tablespoons of vegetable oil over medium heat. Add the minced ginger and garlic, sautéing until fragrant, about 1-2 minutes. Be careful not to burn them.
  3. Step 3: Add the Scallions - Next, add the chopped scallions to the skillet. Stir-fry for another 2-3 minutes until the scallions are tender but still vibrant in color.
  4. Step 4: Create the Sauce - In a small bowl, whisk together the soy sauce, toasted sesame oil, rice vinegar, brown sugar, black pepper, and if you like a little heat, the red chile flakes.
  5. Step 5: Combine Everything - Add the cooked noodles to the skillet with the scallions and aromatics. Pour the sauce over the noodles and toss everything together until well combined and heated through.
  6. Step 6: Serve and Garnish - Divide the Ginger Scallion Noodles into bowls. Sprinkle with sesame seeds for a finishing touch. Enjoy your flavorful creation!
