Ingredients

  • 1 pound baby bella mushrooms sliced
  • 2 cloves garlic minced
  • 1/2 cup onion minced
  • 1/2 cup balsamic vinegar the star ingredient
  • 2 teaspoons soy sauce adds umami
  • 1 teaspoon parsley minced
  • 1 teaspoon rosemary minced
  • 1 teaspoon brown sugar balances acidity

Method
 

  1. Start by cleaning the baby bella mushrooms. Gently wipe them with a damp cloth and slice into halves or quarters.
  2. In a large skillet, heat the butter and olive oil over medium heat until melted and bubbly.
  3. Add the minced onion to the skillet and sauté for about 3-4 minutes until translucent. Then add the minced garlic and sauté for another minute.
  4. Add the sliced mushrooms to the skillet, stir to coat, and cook for about 5-7 minutes until tender and browned.
  5. Pour in the balsamic vinegar and soy sauce, stir, and sprinkle in the brown sugar, parsley, and rosemary. Let simmer for 3-5 minutes.
  6. Taste and adjust seasoning if necessary, then remove from heat and serve warm.

Notes

  • Prep mushrooms ahead of time and store in an airtight container for up to 24 hours.
  • Leftover mushrooms can be refrigerated for up to 3 days.
  • For a vegan option, replace butter with additional olive oil.
