Ingredients
  

For the Salmon:
  • 1 pound center cut salmon fillet fresh, 1/2 to 3/4 pound
  • 1 medium orange sliced thin
  • 2 cups sugar snap peas
  • 1 medium orange for juice
  • 1 tablespoon molasses
  • 1/2 tablespoon molasses optional, for drizzling
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • to taste Kosher salt
  • to taste freshly ground black pepper

Method
 

Preparation Steps:
  1. Step 1: Preheat your oven or grill to 400°F (200°C).
  2. Step 2: In a large mixing bowl, toss the sugar snap peas (or chosen veggies) with olive oil, salt, and pepper.
  3. Step 3: In a separate bowl, whisk together the freshly squeezed orange juice, molasses, soy sauce, and a pinch of salt and pepper.
  4. Step 4: Cut a large piece of aluminum foil, about 12 inches long. Layer thin orange slices in the center of the foil, placing the seasoned salmon on top.
  5. Step 5: Arrange the seasoned sugar snap peas (or chosen vegetables) around the salmon. Drizzle with the prepared marinade.
  6. Step 6: Fold the sides of the foil over the salmon and vegetables to create a tightly wrapped packet.
  7. Step 7: Cook for 15-20 minutes, until the salmon flakes easily with a fork.
  8. Step 8: Carefully open the foil pack and drizzle with optional molasses before serving.

Notes

  • Prep the foil packs ahead of time and store in the fridge for up to 24 hours.
