Cooking Instructions:
- In a large pot, bring 2 cups of water to a boil. Add the cup of long-grain brown rice (or white rice) and a pinch of salt. Reduce the heat to low, cover, and let it simmer for about 40-45 minutes for brown rice or 15-20 minutes for white rice, until tender and water is absorbed. Fluff with a fork and set aside.
- In the same pot, heat a splash of oil over medium heat. Add the diced onion and green bell pepper. Sauté until the onion becomes translucent, about 5 minutes. Add the minced garlic and continue to sauté for another minute, until fragrant.
- Stir in the diced roma tomatoes and taco seasoning. Cook for another 2-3 minutes, allowing the tomatoes to soften and the spices to bloom.
- Pour in the can of tomato sauce, followed by the nutritional yeast, black beans, and cooked sweet corn. Stir everything together until well combined. Let the mixture simmer for about 5-10 minutes to allow the flavors to meld.
- Add the cooked rice to the pot, mixing thoroughly to combine all ingredients. Cook for an additional few minutes until everything is heated through. Taste and adjust seasoning if necessary.
- Serve the Fiesta Rice and Black Beans hot, garnished with your choice of toppings such as avocado, cilantro, chipotle crema, fresh tomatoes, hot sauce, dairy-free cheese shreds, tortilla strips, and a squeeze of lime juice for that extra zing!
