Fiesta Rice and Black Beans

Ingredients
  

For the Dish:
  • 1 cup long-grain brown rice (or white rice)
  • 1 small yellow onion diced
  • 1 small green bell pepper diced
  • 3 cloves garlic minced
  • 2-3 medium roma tomatoes diced
  • 2 tablespoons taco seasoning
  • 1 can tomato sauce (15 oz)
  • 1/4 cup nutritional yeast
  • 1 can black beans drained and rinsed (15 oz)
  • 1 cup sweet corn cooked

  • fresh tomatoes
  • hot sauce
  • dairy-free cheese shreds
  • tortilla strips
  • lime juice

Method
 

Cooking Instructions:
  1. In a large pot, bring 2 cups of water to a boil. Add the cup of long-grain brown rice (or white rice) and a pinch of salt. Reduce the heat to low, cover, and let it simmer for about 40-45 minutes for brown rice or 15-20 minutes for white rice, until tender and water is absorbed. Fluff with a fork and set aside.
  2. In the same pot, heat a splash of oil over medium heat. Add the diced onion and green bell pepper. Sauté until the onion becomes translucent, about 5 minutes. Add the minced garlic and continue to sauté for another minute, until fragrant.
  3. Stir in the diced roma tomatoes and taco seasoning. Cook for another 2-3 minutes, allowing the tomatoes to soften and the spices to bloom.
  4. Pour in the can of tomato sauce, followed by the nutritional yeast, black beans, and cooked sweet corn. Stir everything together until well combined. Let the mixture simmer for about 5-10 minutes to allow the flavors to meld.
  5. Add the cooked rice to the pot, mixing thoroughly to combine all ingredients. Cook for an additional few minutes until everything is heated through. Taste and adjust seasoning if necessary.
  6. Serve the Fiesta Rice and Black Beans hot, garnished with your choice of toppings such as avocado, cilantro, chipotle crema, fresh tomatoes, hot sauce, dairy-free cheese shreds, tortilla strips, and a squeeze of lime juice for that extra zing!

Notes

  • For added protein, consider incorporating quinoa or lentils along with the rice.
  • If you enjoy a bit of heat, add diced jalapeños or a dash of cayenne pepper to the mix.
