Easy Vegetable Fried Rice

Ingredients
  

  • 2 tablespoons butter
  • 1 yellow onion, diced
  • 1 tablespoon minced garlic
  • 3 cups white rice, prepared leftover works best
  • 12 ounces mixed vegetables, frozen
  • 1 tablespoon sesame oil
  • 2 eggs
  • ½ cup soy sauce
  • ½ teaspoon ground black pepper

Method
 

  1. Gather all your ingredients. Dice the yellow onion and mince the garlic. If using fresh vegetables, chop them into small, even pieces.
  2. In a large skillet or wok, melt the butter over medium heat until bubbly.
  3. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute.
  4. Increase the heat to medium-high and add the prepared white rice. Break up any clumps and add the frozen mixed vegetables.
  5. Drizzle the sesame oil, soy sauce, and ground black pepper over the rice mixture. Stir well.
  6. Push the rice mixture to one side and scramble the eggs in the empty space. Once cooked, mix into the rice.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with green onions or sesame seeds if desired.

Notes

  • Use day-old rice for the best texture.
  • Customize with your favorite vegetables or proteins.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
