- Step 1: Preheat the Oven - Begin by preheating your oven to 425°F (220°C). This will ensure that your pizzas bake quickly and evenly.
- Step 2: Prepare the Chickpeas - In a mixing bowl, combine the drained and rinsed chickpeas, olive oil, smoked paprika, minced onion, garlic powder, crushed red pepper flakes, dried oregano, and a pinch of kosher salt and pepper. Toss everything together until the chickpeas are well-coated.
- Step 3: Roast the Chickpeas - Spread the seasoned chickpeas in a single layer on a lined baking sheet. Roast them in the preheated oven for about 20 minutes, or until they are crispy and golden brown. Make sure to shake the pan halfway through for even cooking.
- Step 4: Prepare the Tortilla Pizzas - While the chickpeas are roasting, take your burrito-size flour tortillas and place them on another baking sheet. Spread about half a cup of marinara sauce on each tortilla, leaving a little room around the edges.
