Easy Taco Skillet

Ingredients
  

  • 1 tablespoon olive oil or avocado oil
  • 1/2 large yellow onion, diced
  • 1 medium red bell pepper, seeded and diced
  • 4 cloves garlic, minced
  • 1 lb ground turkey
  • 1 small zucchini, shredded (about 1 cup)
  • 1/4 cup chopped cilantro
  • 2 tablespoons taco seasoning
  • 1 tablespoon fresh lime juice
  • to taste Kosher salt and black pepper
  • 2 cans (14.5 oz) fire roasted tomatoes
  • 1 can (4 oz) diced green chiles
  • 1 cup cooked brown rice or white rice
  • 1 cup shredded cheddar cheese (divided)
  • Optional toppings: cilantro, green onion, diced tomatoes, radish, avocado, jalapeƱo slices, pickled red onions, queso fresco

Method
 

  1. In a large skillet, heat the olive oil or avocado oil over medium heat. Add the diced onion and red bell pepper, cooking for about 3-5 minutes until they begin to soften. Stir in the minced garlic and cook for an additional minute, until fragrant.
  2. Add the ground turkey to the skillet, breaking it apart with your spatula. Cook until the turkey is browned and cooked through, about 5-7 minutes. Make sure to stir frequently to ensure even cooking.
  3. Stir in the shredded zucchini, chopped cilantro, taco seasoning, and fresh lime juice. Season with kosher salt and black pepper to taste. Mix everything together until well combined.
  4. Pour in the fire roasted tomatoes and diced green chiles, stirring to combine. Bring the mixture to a simmer, allowing it to cook for about 5 minutes to meld the flavors.
  5. Stir in the cooked rice, mixing until evenly distributed. Sprinkle half of the shredded cheddar cheese on top, allowing it to melt into the skillet. Once melted, sprinkle the remaining cheese over the top.
  6. Remove from heat and serve hot, garnished with your choice of optional toppings. This Easy Taco Skillet is perfect for serving right out of the pan, making it a fun and casual meal.

Notes

  • For added flavor, try browning the turkey with a pinch of cumin or smoked paprika.
