Ingredients
  

For the Chicken:
  • 2 large boneless skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • to taste Salt & pepper
  • 3 tablespoons cornstarch for coating
  • 3 tablespoons olive oil divided
  • 1 small bunch scallions green parts only
  • 1/3 cup brown sugar packed
  • 1/3 cup water
  • 1/3 cup low sodium soy sauce
  • 1 tablespoon cornstarch for thickening sauce
  • 1 teaspoon grated fresh ginger
  • 3 cloves garlic minced
  • 1/4 teaspoon crushed red pepper flakes (optional)

Method
 

Instructions:
  1. Step 1: Prepare the Chicken - Begin by cutting the chicken breasts into bite-sized pieces.
  2. Step 2: Season and Coat - In a mixing bowl, combine the garlic powder, salt, pepper, and 3 tablespoons of cornstarch. Add the chicken pieces and toss until they are fully coated.
  3. Step 3: Heat the Oil - In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the coated chicken pieces and cook for about 5-7 minutes until golden brown. Remove and set aside.
  4. Step 4: Make the Sauce - In the same skillet, add the remaining tablespoon of olive oil. Sauté the scallions, minced garlic, and grated ginger for about 1 minute until fragrant.
  5. Step 5: Combine Sauce Ingredients - In a small bowl, whisk together the brown sugar, water, low sodium soy sauce, and 1 tablespoon of cornstarch until smooth. Pour into the skillet.
  6. Step 6: Thicken the Sauce - Bring the sauce to a simmer, stirring constantly until it thickens, about 2-3 minutes.
  7. Step 7: Reintroduce the Chicken - Add the cooked chicken back into the skillet, tossing to coat it evenly in the sauce. Cook for an additional 1-2 minutes.
  8. Step 8: Serve and Enjoy - Serve over rice or noodles, garnish with additional scallions if desired.

Notes

  • For extra flavor, marinate the chicken in soy sauce, garlic, and ginger for at least 30 minutes.
  • If you prefer a thicker sauce, increase the amount of cornstarch.
  • This dish can be made gluten-free using tamari instead of soy sauce.
