- Start by bringing a large pot of salted water to a boil. Add the spaghetti noodles and cook according to package instructions until al dente. Once cooked, drain and set aside, reserving a little pasta water for later.
- In a large skillet or wok, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the sliced mushrooms, carrots, and snow peas. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender but still crisp.
- In a small bowl, whisk together the teriyaki sauce, soy sauce or coconut aminos, honey, ginger, and Sriracha sauce (if using). This mixture will serve as the flavorful base for your lo mein.
- Add the cooked spaghetti noodles to the skillet with the sautéed vegetables. Pour the sauce over the top and toss everything together, ensuring the noodles are evenly coated. If the mixture seems dry, add a splash of reserved pasta water to help loosen it up.
- Drizzle the remaining tablespoon of olive oil over the noodle mixture and give it one last toss. Taste and adjust seasoning as needed, adding more soy sauce or Sriracha for extra flavor.
- Serve the Easy Lo Mein in bowls, garnished with chopped green onions or sesame seeds if desired. Enjoy your homemade meal that’s ready in no time!
