Ingredients
  

For the Salad:
  • 1 batch Caesar dressing homemade or store-bought
  • 1 batch keto croutons homemade or store-bought
  • 2 tablespoons olive oil for cooking the chicken
  • 4 pieces skinless chicken breasts 7 oz / 200g each
  • to taste Salt
  • to taste Pepper
  • 1 large head Romaine lettuce 680g / 24oz
  • 1.8 oz shaved parmesan 50g

Method
 

Instructions:
  1. Step 1: Season the chicken breasts with salt and pepper. Heat the olive oil in a large skillet over medium heat. Cook the chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove and let rest before slicing.
  2. Step 2: Prepare your Caesar dressing. If using homemade, blend the ingredients until smooth. Adjust seasoning as necessary.
  3. Step 3: Prepare the keto croutons by baking or pan-frying low-carb bread until crispy.
  4. Step 4: Chop the Romaine lettuce, rinse, dry, and place it in a large salad bowl.
  5. Step 5: Add the sliced chicken to the bowl with Romaine, drizzle with dressing, and toss until well-coated.
  6. Step 6: Top with shaved parmesan and croutons, toss gently, and serve immediately.

Notes

  • Store chicken and dressing separately to maintain freshness.
  • For vegetarian options, replace chicken with grilled veggies or chickpeas.
  • Croutons can be substituted with crushed nuts for a gluten-free option.
