Ingredients

For the Filling:
  • 3 cups cooked chicken (shredded; rotisserie chicken works great!)
  • 8 ounces cream cheese (softened)
  • 4 ounces green chilies (1 small can)
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 cup Monterey Jack cheese (shredded)
  • Salt and black pepper to taste
  • 8-10 small flour tortillas (or corn tortillas, if preferred)
  • 15 ounces red enchilada sauce (1 can)
  • 1 cup Mexican blend cheese (or cheddar cheese, shredded)
  • ½ cup red onion (finely diced)
  • 1 tablespoon fresh cilantro (chopped)
  • ½ cup tomatoes (finely chopped)

Equipment

  • Mixing bowl
  • 9x13 inch baking dish
  • Spatula
  • Measuring cups and spoons
  • Oven

Method

Instructions
  1. Step 1: Preheat Your Oven
Preheat your oven to 350°F (175°C). This ensures that your enchiladas bake evenly and come out perfectly golden.
  2. Step 2: Prepare the Filling
In a large mixing bowl, combine the shredded chicken, softened cream cheese, green chilies, garlic powder, ground cumin, Monterey Jack cheese, and season with salt and black pepper to taste. Mix until all ingredients are well incorporated.
  3. Step 3: Assemble the Enchiladas
Spread a thin layer of red enchilada sauce on the bottom of your baking dish. Take a tortilla, spoon a generous amount of the chicken filling into the center, and roll it up tightly. Place the rolled tortilla seam-side down in the baking dish. Repeat with the remaining tortillas and filling.
  4. Step 4: Top with Sauce and Cheese
Once all the enchiladas are in the dish, pour the remaining red enchilada sauce over the top. Sprinkle the Mexican blend cheese generously over the sauce.
  5. Step 5: Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  6. Step 6: Garnish and Serve
Once out of the oven, let the enchiladas cool for a few minutes. Garnish with diced red onion, fresh cilantro, and chopped tomatoes. Serve warm and enjoy the delightful flavors of your Easy Chicken Enchiladas!

Notes

  • For a little extra spice, add jalapeños to the filling or top the enchiladas with sliced jalapeños before baking.
  • Feel free to use leftover turkey or beef if you don’t have chicken on hand; the recipe adapts beautifully!
  • If you prefer a lighter version, substitute the cream cheese with Greek yogurt for a tangy twist.
  • Make sure your tortillas are warmed slightly before rolling to prevent them from cracking.
