Ingredients

  • 2 large chicken breasts or 4 small chicken breasts, cut large breasts in half like a book opens
  • 1 large egg
  • 1 cup bread crumbs
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 4 tablespoons olive oil
For the Vegetables:
  • 1 zucchini cubed
  • 1 onion coarsely diced
  • 1 tomato coarsely diced
  • 1 red or green bell pepper coarsely diced
For the Cheese:
  • 1 block cream cheese cut into pea-sized pieces
  • 1 cup sharp cheddar
  • 1 cup parmesan
  • 1 cup mozzarella
  • 5 basil leaves cut chiffonade

Instructions:
  1. Step 1: Preheat Your Oven - Begin by preheating your oven to 375°F (190°C). This ensures that your chicken cooks evenly and thoroughly.
  2. Step 2: Prepare the Chicken - In a large mixing bowl, beat the egg. Add the salt, pepper, and paprika, mixing well. Dip each chicken breast into the egg mixture, making sure to coat it thoroughly.
  3. Step 3: Coat the Chicken - In another bowl, place the bread crumbs. Dredge the egg-coated chicken breasts in the bread crumbs until fully covered. This creates a flavorful crust that will keep the chicken juicy.
  4. Step 4: Sauté the Vegetables - In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking for about 3-4 minutes until they start to soften. Then, add the cubed zucchini and diced tomato, sautéing for another 3-4 minutes until they are tender.
  5. Step 5: Assemble in a Baking Dish - In a baking dish, layer the sautéed vegetables evenly. Place the coated chicken breasts on top of the vegetable layer. Dot the chicken with pieces of cream cheese, then sprinkle the sharp cheddar, parmesan, and mozzarella cheese over everything.
