Instructions:
- Step 1: Preheat your oven to 400°F (200°C). This will ensure that your breadsticks bake evenly and become perfectly golden.
- Step 2: Place the cauliflower florets in a food processor. Pulse until the cauliflower resembles rice or small crumbs.
- Step 3: Transfer the processed cauliflower to a microwave-safe bowl and cover it. Microwave on high for about 4-5 minutes until tender.
- Step 4: Let the cauliflower cool slightly, then squeeze out as much liquid as possible.
- Step 5: In a mixing bowl, combine the drained cauliflower, 2 large eggs, ½ cup of the shredded Italian cheese, Italian seasoning, 1 tablespoon of the chopped basil, garlic powder, salt, and pepper. Stir until well combined.
- Step 6: Line your baking sheet with parchment paper. Spread the cauliflower mixture onto the baking sheet, shaping it into a rectangle about ½ inch thick.
- Step 7: Bake in the preheated oven for about 25-30 minutes, or until the edges are golden brown and the center is set.
- Step 8: Remove the baking sheet from the oven. Sprinkle the remaining ½ cup of Italian cheese and the shredded cheddar cheese over the baked cauliflower base. Return to the oven for an additional 5-10 minutes.
- Step 9: Once the cheese is melted, sprinkle the remaining chopped basil on top. Allow to cool for a few minutes before slicing into sticks.
