Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil for sautéing
  • 1 pieces green bell pepper
  • 1 pieces red bell pepper
  • 1 pieces onion
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 teaspoon cayenne pepper or red pepper flakes for spice
  • 6 slices pepper jack cheese for topping
  • 1 tablespoon olive oil for drizzling

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: Chop the green and red bell peppers, and onion into thin strips.
  3. Step 3: In a skillet over medium heat, add 1 tablespoon of olive oil. Sauté bell peppers and onions for 5-7 minutes until tender, then stir in spices and cook for an additional minute.
  4. Step 4: In a large baking dish, arrange chicken breasts in a single layer, drizzle with olive oil, and sprinkle with salt and spices.
  5. Step 5: Evenly distribute the sautéed veggies over the chicken.
  6. Step 6: Top each chicken breast with a slice of pepper jack cheese.
  7. Step 7: Bake for 25-30 minutes until chicken is cooked through and cheese is bubbly.
  8. Step 8: Let rest for a few minutes before serving. Enjoy!

Notes

  • Adjust spice levels to your preference; add more cayenne for heat.
  • Any melting cheese can substitute for pepper jack.
