Easy Cauliflower Fried Rice

Ingredients
  

  • 1 medium head cauliflower riced
  • 2 tablespoons sesame oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup mixed vegetables frozen peas, carrots, and corn
  • 2 large eggs lightly beaten
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 2 stalks green onions sliced
  • Salt and pepper to taste

  • Large skillet or wok

Method
 

  1. Start by removing the leaves and stem from the cauliflower. Cut it into chunks and pulse in a food processor until it resembles rice. If you don’t have a food processor, you can also grate the cauliflower using a box grater.
  2. In a large skillet or wok, heat the sesame oil over medium heat. Once hot, add the diced onion and sauté for 2-3 minutes until translucent.
  3. Stir in the minced garlic and mixed vegetables. Cook for another 3-4 minutes, stirring frequently until the vegetables are tender.
  4. Push the vegetable mixture to one side of the pan. Pour the beaten eggs into the empty side and scramble them until fully cooked. Once done, mix the eggs with the vegetables.
  5. Add the riced cauliflower to the skillet. Pour in the soy sauce and stir everything together. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
  6. Season the fried rice with salt and pepper to taste. Remove from heat and garnish with sliced green onions before serving.

Notes

  • For best texture, don’t overcook the cauliflower; it should be tender but still have a bit of crunch.
  • Use leftover cooked cauliflower rice for a quick meal.
  • Experiment with seasonal vegetables to keep it fresh.
  • Add a splash of lime juice before serving for a refreshing twist!
