  • 3 medium bananas very ripe
  • 1/2 cup unsalted butter melted
  • 1 tsp vanilla extract
  • 2 large eggs whisked
  • 1 1/2 cups flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup nuts (pecans or walnuts), chopped

Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C) for even baking.
  2. Step 2: Grease a standard loaf pan with butter or cooking spray, or line it with parchment paper.
  3. Step 3: Mash the very ripe bananas until smooth in a large mixing bowl.
  4. Step 4: Add melted butter to the mashed bananas, then stir in vanilla extract and whisked eggs.
  5. Step 5: In another bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg until mixed.
  6. Step 6: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  7. Step 7: Fold in blueberries and toasted nuts using a spatula.
  8. Step 8: Pour the batter into the prepared loaf pan, smoothing the top.
  9. Step 9: Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
