Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • to taste Salt
  • to taste Freshly ground black pepper
  • 1/2 cup basil pesto (store-bought or homemade)
  • 1/2 cup grated mozzarella cheese (or more if you like it cheesy!)

Equipment

  • Meat Mallet or Rolling Pin
  • Measuring cups
  • Cooking spray or olive oil
  • Knife and cutting board

Method
 

  1. Begin by preheating your oven to 375°F (190°C).
  2. Take your boneless, skinless chicken breasts and place them between two sheets of plastic wrap. Using a meat mallet or rolling pin, gently pound the chicken to about 1-inch thickness.
  3. Sprinkle both sides of the chicken breasts with salt and freshly ground black pepper.
  4. Spread a generous tablespoon of basil pesto on top of each chicken breast.
  5. Sprinkle the grated mozzarella cheese over the pesto-covered chicken.
  6. Place the chicken in the preheated oven and bake for 25-30 minutes or until the chicken is cooked through and the cheese is bubbly and golden.
  7. Once done, remove the chicken from the oven and let it rest for a few minutes before serving.
