  • 1/2 cup brown sugar
  • 1/4 cup superfine sugar

  • 1 teaspoon vanilla extract
  • 1 cup dairy free chocolate chips

Method
 

  1. Start by preheating your oven to 350°F (175°C). Line your baking sheet with parchment paper to prevent sticking.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set this mixture aside as you prepare the wet ingredients.
  3. In a large mixing bowl, combine the softened dairy free butter, brown sugar, and superfine sugar. Using a whisk or an electric mixer, beat until the mixture is light and fluffy.
  4. Crack in the large egg and add the vanilla extract. Continue mixing until everything is well combined.
  5. Gradually add the dry ingredient mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  6. Gently fold in the dairy free chocolate chips, ensuring they are evenly distributed throughout the cookie dough.
  7. Using a cookie scoop or spoon, drop rounded tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the centers appear slightly underbaked.
