  • 2 pounds baby potatoes preferably baby Yukon Gold
  • 2 tablespoons fresh rosemary
  • 2 tablespoons minced garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper

Method
 

Instructions:
  1. Step 1: Preheat your oven to 425°F (220°C). A hot oven is crucial for achieving that perfect crispiness.
  2. Step 2: Wash the baby potatoes thoroughly under cold water to remove any dirt. If some are larger than others, cut them in half to ensure even cooking.
  3. Step 3: In a large mixing bowl, combine the baby potatoes, olive oil, minced garlic, fresh rosemary, salt, and pepper. Toss everything together until the potatoes are well coated.
  4. Step 4: Spread the seasoned potatoes in a single layer on your baking sheet. Make sure they aren’t overcrowded; this will ensure they roast rather than steam.
  5. Step 5: Roast the potatoes in the preheated oven for about 25-30 minutes. Halfway through, use a spatula or tongs to flip the potatoes to promote even browning. They should be golden and crispy on the outside when done.
  6. Step 6: Once the potatoes are crispy and tender, remove them from the oven and let them cool slightly before serving. Enjoy them hot as a side dish or snack!

Notes

  • Soak the potatoes in cold water for 30 minutes before cooking for extra crispiness.
  • If using dried rosemary, reduce the amount to about 1 tablespoon.
