Ingredients
  

  • 1 cup cooked, shredded chicken Use rotisserie chicken for convenience
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 cup marinara sauce
  • 1.5 cups shredded mozzarella or Italian blend cheese
  • Pepperoni Optional
  • Parmesan cheese For sprinkling on top
  • Fresh basil For garnishing
  • Olive oil For brushing the tortillas

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the shredded chicken with dried basil, dried oregano, and garlic powder. Mix well.
  3. Take one tortilla and spread a spoonful of marinara sauce evenly over one half. Add the chicken mixture and shredded mozzarella cheese, then fold the tortilla over.
  4. Lightly coat the outside of the folded quesadilla with olive oil.
  5. Place the quesadillas on a baking sheet lined with parchment paper. Bake for about 10-12 minutes, flipping halfway through.
  6. Once baked, sprinkle with grated parmesan cheese and fresh basil. Allow to cool slightly before slicing.
  7. Serve with additional marinara sauce on the side for dipping.
