Ingredients

  • 3 pieces boneless skinless chicken breasts cut in half
  • 2 tsp garlic powder divided
  • 1 tsp ground black pepper divided
  • Salt Salt to taste
For the Sauce:
  • 29 oz chicken broth
  • 1/4 cup lemon juice fresh
  • 1 1/2 cups heavy whipping cream
  • 1 tsp lemon zest grated
For the Pasta:
  • 16 oz penne pasta cooked as directed on box
  • Shredded cheese Shredded cheese optional

Method
 

Preparation Steps:
  1. Start by seasoning the chicken breasts with 1 teaspoon of garlic powder, 1/2 teaspoon of ground black pepper, and a sprinkle of salt. Ensure the chicken is evenly coated with the seasoning.
  2. In a large skillet over medium heat, add a drizzle of olive oil. Once hot, place the seasoned chicken in the skillet. Cook for about 5-7 minutes on each side, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining garlic powder and ground black pepper. Squeeze the juice from the quartered lemon into the skillet, scraping up any bits left from the chicken. This adds flavor to the sauce.
  4. Pour in the chicken broth, bringing it to a gentle simmer. Allow it to cook for about 5 minutes, letting the flavors meld together.
  5. Reduce the heat to low and stir in the heavy whipping cream. Add in the lemon zest and mix until the sauce is well combined and begins to thicken slightly.
  6. Add the cooked penne pasta to the skillet, tossing it in the creamy sauce until well coated. Slice the cooked chicken and place it on top of the pasta.
