  • 3/4 cup whipped cottage cheese
  • 1/4 cup olive oil or any neutral-flavored oil
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C). This ensures your muffins bake evenly and rise perfectly.
  2. Line a muffin tin with paper liners or lightly grease each cup with oil to prevent sticking.
  3. In a large mixing bowl, combine the whipped cottage cheese, olive oil, eggs, milk, and vanilla extract. Whisk until smooth and creamy.
  4. In another bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until no lumps remain.
  5. Gradually add the dry mixture to the wet mixture, stirring gently with a spatula until just combined.
  6. Fold in the chocolate chips until evenly distributed throughout the batter.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake in the preheated oven for 18-20 minutes, or until a toothpick comes out clean.
  9. Once baked, let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack.
