  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 2 cups Buttermilk
  • 2 large Eggs lightly beaten
  • 1/4 cup Honey
  • 1 teaspoon Vanilla Extract
  • 4 tablespoons Unsalted Butter melted and slightly cooled
For the Blackberry Compote:
  • 16 ounces Blackberries fresh or frozen
  • 2 tablespoons Sugar
  • 1 tablespoon Water if using fresh berries

Equipment

  • Waffle iron
  • Mixing bowls
  • Whisk
  • Spatula
  • Small saucepan
  • Measuring cups and spoons

Method

Instructions:
  1. Step 1: Preheat the Waffle Iron. Begin by preheating your waffle iron according to the manufacturer’s instructions.
  2. Step 2: Mix the Dry Ingredients. In a large mixing bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt.
  3. Step 3: Combine the Wet Ingredients. In another bowl, combine the buttermilk, eggs, honey, vanilla extract, and melted butter. Whisk until well combined.
  4. Step 4: Mix Wet and Dry Ingredients. Pour the wet ingredients into the dry ingredients and gently fold them together using a spatula until just combined.
  5. Step 5: Cook the Waffles. Ladle an appropriate amount of batter onto the center of the waffle iron and cook until golden brown and crisp.
  6. Step 6: Prepare the Blackberry Compote. In a small saucepan, combine blackberries, sugar, and water (if using fresh) and cook over medium heat until thickened, about 10 minutes.
  7. Step 7: Serve and Enjoy. Serve the warm waffles topped with blackberry compote and enjoy!

Notes

  • These waffles freeze well! Let them cool and store in an airtight container.
  • Try using maple syrup instead of honey for a different flavor.
  • Experiment with different fruits for the compote!
