Method
 

  1. In a large mixing bowl, combine the almond flour, vanilla protein powder, melted coconut oil, and pure maple syrup. Stir until the mixture is well combined and resembles a dough.
  2. Line a baking sheet with parchment paper. Spread the cookie dough mixture evenly onto the prepared baking sheet, pressing it down firmly to create a solid base.
  3. In a double boiler or microwave-safe bowl, combine 1 cup of dark chocolate chips with 1 teaspoon of coconut oil. Melt until smooth, stirring frequently to avoid burning.
  4. Once melted, pour the chocolate over the cookie dough layer. Use a spatula to spread the chocolate evenly across the surface.
  5. Sprinkle the remaining dark chocolate chips, mini M&M candies, and crushed peppermints over the melted chocolate. Add sprinkles for a fun and festive touch.
  6. Place the baking sheet in the refrigerator for about 1-2 hours, or until the chocolate has completely set.
  7. Once set, remove the bark from the refrigerator. Lift the parchment paper to remove it from the baking sheet, and cut it into squares or break it into pieces. Enjoy your delicious Cookie Dough Bark!
