Method:
- Begin by rinsing the chicken wings under cold water and patting them dry with paper towels. In a large mixing bowl, combine the Coca-Cola, soy sauce, smashed garlic cloves, sliced ginger, and the juice of one large lime. Add the salt to the marinade, and then toss in the chicken wings, ensuring they are well coated. Cover the bowl with plastic wrap and let the wings marinate in the refrigerator for at least 2 hours, or ideally overnight for maximum flavor.
- Once you’re ready to cook, preheat your oven to 400°F (200°C). This high temperature will help achieve that perfect crispy skin.
- Line a baking sheet with parchment paper for easy cleanup. Take the marinated chicken wings out of the refrigerator and arrange them in a single layer on the prepared baking sheet, discarding any leftover marinade.
- Place the baking sheet in the preheated oven and bake the wings for 30-35 minutes, flipping them halfway through. The wings should be golden brown and crispy.
- While the wings are baking, prepare the glaze. In a small saucepan over medium heat, pour in the remaining marinade (from the mixing bowl). Add the cornstarch and whisk until combined. Allow the mixture to come to a gentle boil, then reduce the heat and let it simmer for about 5-7 minutes, until it thickens slightly. Remove from heat and stir in the unsalted butter until melted.
- Once the wings are cooked, remove them from the oven and transfer them to a mixing bowl. Pour the glaze over the wings and toss them until they are well coated.
- Chop the scallions and sprinkle them over the glazed wings for a fresh, vibrant touch. Serve the Coca-Cola Chicken Wings hot, and watch them disappear in no time!
Notes
- For a lower-sugar option, use Diet Coca-Cola instead.
- Substitute coconut aminos for soy sauce for a gluten-free alternative.
- Increase the amount of fresh lime juice for an extra citrus kick.
