Ingredients

  • 4 Large Eggs
  • 1 Teaspoon Cream of Tartar
  • 4 Tablespoons Cream Cheese (softened, about 2 ounces)
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Onion Powder

Equipment

  • Mixing bowls
  • Electric mixer
  • Spatula
  • Baking Sheet
  • Oven

Method

  1. Step 1: Preheat the Oven. Start by preheating your oven to 300°F (150°C). This ensures that your Cloud Bread bakes evenly.
  2. Step 2: Prepare the Egg Whites. In a large mixing bowl, separate the egg whites from the yolks, being careful not to let any yolk mix with the whites. Add the cream of tartar to the egg whites.
  3. Step 3: Whip the Egg Whites. Using an electric mixer, beat the egg whites on high speed until they form stiff peaks. This process is crucial for achieving that light, fluffy texture.
  4. Step 4: Mix the Egg Yolks and Cream Cheese. In another bowl, combine the egg yolks and softened cream cheese. Mix until smooth and creamy. Add salt, garlic powder, and onion powder to the mixture and blend well.
  5. Step 5: Fold the Mixtures Together. Gently fold the whipped egg whites into the yolk mixture, being careful not to deflate the whites. The goal is to maintain as much air as possible for that cloud-like texture.
  6. Step 6: Shape and Bake. Scoop the mixture onto a baking sheet lined with parchment paper, forming rounds or ovals as desired. Bake in the preheated oven for 25-30 minutes or until the tops are golden and firm.
  7. Step 7: Cool and Enjoy. Once baked, remove the Cloud Bread from the oven and allow it to cool on a wire rack. This cooling step is essential to maintain the structure before serving.

Notes

  • Ensure bowls and utensils are clean and dry for proper egg white whipping.
  • Take your time folding the mixtures for a light, airy texture.
  • Experiment with seasonings to customize flavor to your liking.
  • Monitor baking time carefully for a perfect golden brown finish.
