Ingredients
  

For the Cake:
  • 3 cups superfine sugar
  • 1 1/2 cups unsalted butter at room temperature
  • 6 ounces cream cheese
  • 4 large eggs at room temperature
  • 2 large egg yolks
  • 1/4 cup half-and-half
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon salt

Method
 

Baking Instructions:
  1. Step 1: Preheat your oven to 325°F (160°C). Grease and flour your loaf pan.
  2. Step 2: In your stand mixer, combine the room temperature unsalted butter and superfine sugar. Beat on medium speed until light and fluffy, about 5-7 minutes.
  3. Step 3: Add cream cheese and beat until combined, scraping down the sides of the bowl.
  4. Step 4: Add eggs and yolks one at a time, mixing well after each addition.
  5. Step 5: Mix in half-and-half and vanilla extract until just combined.
  6. Step 6: Whisk together flour and salt in a separate bowl, then gradually add to the wet mixture, mixing on low speed until just combined.
  7. Step 7: Pour the batter into the prepared loaf pan and smooth the top. Bake for 70-80 minutes or until a toothpick comes out clean.
  8. Step 8: Let the cake cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

  • Store in an airtight container at room temperature for up to 3 days.
  • Wrap tightly in plastic wrap and freeze for up to 3 months.
  • Thaw frozen cake in the refrigerator overnight before serving.
