Preheat your oven to 375°F (190°C) and line your muffin tin with paper liners or grease it lightly to prevent sticking.
In a large mixing bowl, whisk together the flour, sugar, salt, baking powder, and cinnamon until well combined.
In a separate bowl, whisk together the eggs, melted butter, and milk until the mixture is smooth.
Pour the wet mixture into the bowl of dry ingredients. Gently stir until just combined; it’s okay if there are a few lumps.
In a small bowl, combine the sugar and cinnamon for the topping. Set it aside.
Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the cinnamon sugar mixture on top.
Bake in the preheated oven for 18 to 20 minutes, or until a toothpick inserted comes out clean. Allow to cool for 5 minutes before transferring to a wire rack.
