Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Cream together the butter and brown sugar until light and fluffy.
Stir in the honey, molasses, and vanilla extract until well combined.
In a separate bowl, whisk together the all-purpose flour, whole wheat pastry flour, cinnamon, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Roll out the dough to about 1/8-inch thickness and cut into desired shapes.
Sprinkle cinnamon sugar over the top of the cut crackers.
Bake for about 10-12 minutes, or until golden brown.
Let the crackers cool on the baking sheet for a few minutes before transferring to a wire rack.
