Ingredients
  

  • 8 tbsp butter unsalted
  • 1/3 cup brown sugar
  • 1 1/2 tbsp honey
  • 1/2 tbsp molasses
  • 1/2 tbsp vanilla extract
  • 3/4 cup all-purpose flour
  • 2/3 cup whole wheat pastry flour
  • 1/2 tbsp cinnamon
  • 1/2 tsp baking soda
  • 1 pinch salt
  • to taste cinnamon sugar for topping

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together the butter and brown sugar until light and fluffy.
  3. Stir in the honey, molasses, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, whole wheat pastry flour, cinnamon, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Roll out the dough to about 1/8-inch thickness and cut into desired shapes.
  7. Sprinkle cinnamon sugar over the top of the cut crackers.
  8. Bake for about 10-12 minutes, or until golden brown.
  9. Let the crackers cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For a more intense cinnamon flavor, increase cinnamon to 1 tablespoon.
  • These crackers can be cut into various shapes for fun!
  • For crunchier texture, roll the dough thinner.
