Chocolate Workout Bars

Ingredients
  

  • 1 can black beans drained and rinsed
  • 1/4 tsp salt
  • 1/4 cup nut butter of choice or oil
  • 1/2 cup pure maple syrup or honey, agave, or date syrup
  • 3 tbsp cocoa powder
  • 2/3 cup oat flour or almond flour, or 1 cup rolled oats
  • 1/2 cup chocolate chips
  • as needed optional chocolate coating

Equipment

  • Mixing bowl
  • Spatula
  • Baking dish

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Drain and rinse the can of black beans thoroughly.
  3. In a food processor, combine the black beans, salt, nut butter, and maple syrup. Blend until smooth.
  4. Transfer the mixture to a mixing bowl. Add cocoa powder and oat flour (or almond flour) and stir until combined.
  5. Fold in the chocolate chips gently.
  6. Spread the mixture in the prepared baking dish. Bake for 20-25 minutes.
  7. Let the bars cool in the baking dish for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Store in an airtight container to keep them fresh.
  • These bars can last up to a week in the fridge.
  • Freeze for up to three months, layering parchment paper between bars.
