Ingredients

For the Crust:
  • 1 cup all-purpose flour substitute with gluten-free if needed
  • 5 cups shredded sweetened coconut
  • 1 teaspoon salt
For the Filling:
  • 1 14-ounce can sweetened condensed milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract optional
  • 2 cups semi-sweet or dark chocolate chips your favorite brand
  • 1 cup heavy whipping cream

Equipment

  • Mixing bowls
  • 9-inch pie dish
  • Measuring cups and spoons
  • Rubber spatula
  • Whisk
  • Oven

Method

Cooking Chocolate Macaroon Pie:
  1. Step 1: Preheat the Oven. Begin by preheating your oven to 350°F (175°C).
  2. Step 2: Prepare the Coconut Crust. In a large mixing bowl, combine the shredded coconut, all-purpose flour, and salt. Mix well.
  3. Step 3: Add the Wet Ingredients. Pour in the sweetened condensed milk, vanilla extract, and almond extract (if using). Stir with a rubber spatula until everything is well combined.
  4. Step 4: Form the Pie Crust. Grease your 9-inch pie dish lightly and press the coconut mixture into the bottom and up the sides to form a crust.
  5. Step 5: Bake the Crust. Place the pie crust in the preheated oven and bake for about 15-20 minutes, or until golden brown.
  6. Step 6: Prepare the Chocolate Filling. While the crust is baking, melt the chocolate chips and heavy whipping cream in a saucepan over low heat.
  7. Step 7: Fill the Pie Crust. Once the crust is baked, pour the melted chocolate mixture into it and spread evenly.
  8. Step 8: Chill the Pie. Refrigerate for at least 2 hours until the chocolate filling is set.
  9. Step 9: Serve and Enjoy. Slice and serve, garnishing with whipped cream or toasted coconut if desired.
