Ingredients

  • 1 cup Karo syrup or brown rice syrup
  • 1 cup creamy peanut butter
  • 1/2 cup sugar
  • 4 1/2 cups corn flakes
  • 2 cups roasted salted cashews
  • 1/2 cup raw unsalted pecans
  • 2 tablespoons sugar for topping
  • 2 tablespoons sucanat or brown sugar
  • 1/2 tablespoon butter, softened
  • 2 teaspoons pure vanilla extract
  • 1/2 cup mini chocolate chips
  • 2 1/2 cups dark or milk chocolate chips for drizzling on top

Equipment

  • Mixing bowl
  • Spatula
  • 9x13 inch baking dish
  • Measuring cups and spoons
  • Microwave-safe bowl

Method

  1. Step 1: Prepare Your Baking Dish. Start by greasing a 9x13 inch baking dish with a bit of butter or lining it with parchment paper for easy removal later.
  2. Step 2: Combine the Base Ingredients. In a large mixing bowl, combine the Karo syrup (or brown rice syrup), creamy peanut butter, and 1/2 cup of sugar. Mix until smooth and well combined.
  3. Step 3: Add the Crunchy Elements. Gently fold in the corn flakes, roasted salted cashews, and raw unsalted pecans into the peanut butter mixture.
  4. Step 4: Incorporate the Chocolate Chips. Now, add the mini chocolate chips and the vanilla extract to the mixture. Stir until everything is combined.
  5. Step 5: Press the Mixture into the Baking Dish. Transfer the mixture into your prepared baking dish. Press the mixture firmly into the bottom to create an even layer.
  6. Step 6: Prepare the Topping. In a microwave-safe bowl, combine the 2 1/2 cups of dark or milk chocolate chips with the softened butter and the additional sugar.
  7. Step 7: Chill and Set. Place the baking dish in the refrigerator for at least 1-2 hours, or until the chocolate topping is set.
  8. Step 8: Slice and Serve. Once set, remove the bars from the refrigerator. Use a sharp knife to cut them into squares or rectangles.

Notes
