Ingredients

For the Banana Bread:
  • 1 cup ripe mashed bananas about 1 to 2 bananas
  • 4 tablespoons softened butter
  • 1/4 cup plain Greek yogurt
  • 3/4 cup light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup cherries chopped or halved, thawed and patted dry if frozen
  • 2 tablespoons flour for tossing the cherries
  • 3/4 cup semi-sweet chocolate chips

Equipment

  • Mixing bowl
  • Loaf pan (9x5 inch)
  • Measuring cups and spoons
  • Rubber spatula
  • Whisk
  • Oven mitts

Method

Method:
  1. Step 1: Preheat the Oven - Preheat your oven to 350°F (175°C). This ensures that your bread bakes evenly.
  2. Step 2: Prepare the Pan - Grease your loaf pan with butter or line it with parchment paper for easy removal.
  3. Step 3: Mix Wet Ingredients - In a large mixing bowl, combine the mashed bananas, softened butter, Greek yogurt, brown sugar, egg, and vanilla extract. Use a whisk to mix until the ingredients are well combined and creamy.
  4. Step 4: Combine Dry Ingredients - In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. This helps to evenly distribute the leavening agents throughout the flour.
  5. Step 5: Combine Wet and Dry Mixtures - Gradually add the dry ingredients to the wet mixture, stirring gently with a rubber spatula until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  6. Step 6: Toss in the Cherries and Chocolate - In a small bowl, toss the chopped cherries with the 2 tablespoons of flour. This helps to prevent them from sinking to the bottom of the loaf. Gently fold the cherries and chocolate chips into the batter until evenly distributed.
  7. Step 7: Transfer to the Pan - Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  8. Step 8: Bake - Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Keep an eye on it during the last few minutes of baking to avoid over-browning.
  9. Step 9: Cool - Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
