Ingredients

Main Ingredients:
  • 14 oz red and green cabbage, shredded
  • 1 cup carrot, grated
  • 1 cup yellow bell pepper, chopped
  • 3 whole green onions, chopped
  • 1/4 cup cilantro, fresh, chopped
  • 11 oz can mandarin oranges, well-drained
  • 1 cup chow mein noodles
  • 1/4 cup sliced almonds, toasted
  • 1/3 cup red onion, chopped
  • 1 clove garlic, finely minced
  • 1 1/2 teaspoons ginger, finely minced
  • 1 1/2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon white vinegar
  • 2 tablespoons canola oil or vegetable oil
  • Salt to taste
  • Black pepper to taste

Equipment

  • Large mixing bowl
  • Wooden spoon or spatula
  • Sharp Knife
  • Measuring cups and spoons

Method

Method:
  1. Begin by shredding the red and green cabbage and placing it in a large mixing bowl. Next, grate the carrot, chop the yellow bell pepper, green onions, and red onion, and add them to the bowl with the cabbage.
  2. Chop the fresh cilantro and toss it into the bowl. The cilantro will add a refreshing note to your Chinese Cabbage Salad.
  3. Open the can of mandarin oranges and drain them well. Add the oranges to the salad mixture for a burst of sweetness that perfectly complements the savory ingredients.
  4. Next, add the chow mein noodles and toasted sliced almonds to the bowl. These ingredients will provide a satisfying crunch that contrasts beautifully with the tender vegetables.
  5. In a separate small bowl, whisk together the minced garlic, ginger, soy sauce, brown sugar, sesame oil, white vinegar, canola oil, and a pinch of salt and black pepper. This dressing will tie all the flavors of your Chinese Cabbage Salad together.
  6. Pour the dressing over the salad ingredients and gently toss everything together until the salad is evenly coated with the dressing. Taste and adjust the seasoning with additional salt and pepper, if needed.
  7. For the best flavor, allow your salad to chill in the refrigerator for at least 30 minutes before serving. This time lets the flavors meld beautifully.

Notes

  • Store in an airtight container in the refrigerator for up to 3 days.
  • Add chow mein noodles just before serving to maintain crunch.
  • Keep dressing separate until ready to serve to prevent sogginess.
