Ingredients
  

  • 4 cups riced cauliflower (about 1 large head of cauliflower)
  • 1 cup cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 3 cloves garlic minced
  • 1 tablespoon Italian seasoning
  • 4 eggs
  • 2 teaspoons salt (or to taste)
  • 1 teaspoon pepper (or to taste)

Method
 

  1. Preheat your oven to 400°F (200°C). Remove leaves and stem from the cauliflower and cut into smaller pieces. Pulse in a food processor until it resembles small grains of rice.
  2. Transfer riced cauliflower to a microwave-safe bowl, cover with a damp paper towel, and microwave on high for 5-7 minutes or until tender. Let cool and squeeze out excess moisture.
  3. In a large mixing bowl, combine riced cauliflower, cheddar cheese, mozzarella cheese, minced garlic, Italian seasoning, eggs, salt, and pepper. Stir until well combined.
  4. Form the mixture into small tots, about the size of a golf ball, and place on a baking sheet lined with parchment paper.
  5. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  6. Let cool for a few minutes before serving. Enjoy with your favorite dipping sauce!

  • You can use pre-riced cauliflower for convenience.
