In another bowl, whisk the eggs until they are well combined. Gradually add the melted butter to the eggs, mixing thoroughly.
Once the yeast is activated, add it to the bowl with the egg and butter mixture. Slowly incorporate the dry ingredients into this mixture, stirring until a dough begins to form.
Transfer the dough to a floured surface and knead for about 10 minutes, or until it becomes smooth and elastic.
Once your dough is kneaded, gently fold in the grated cheddar cheese until evenly distributed.
Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
After the dough has risen, punch it down to release the air. Divide the dough into equal portions (about 12-16 pieces) and shape them into rolls.
Cover the shaped rolls with a kitchen towel and let them rise for another 30-45 minutes.
While the rolls are rising, preheat your oven to 375°F (190°C).
Once the rolls have completed their second rise, bake them in the preheated oven for about 20-25 minutes, or until they are golden brown on top.
